Tomatillo Salsa

Preheat oven to 400 degrees
You will need a full sheet pan, blender/food processor, cutting board, and knife
20 Tomatillos, washed and halved
1 White Onion, quarter
1 Jalapeno, halved and seeded if you want less heat
6 Cloves of Garlic
1/3 cup Olive Oil
Salt and Pepper to taste
1 Bunch of Cilantro
1 Lime, juiced
Few dashes of Hot Sauce
Place everything on the sheet pan but the last 3 ingredients. Mix olive oil and Salt and Pepper in. Roast for 30-45 minutes. Let cool for about 5 minutes and then blend in 2 batches. Add half of Cilantro, lime juice, and lime essential oil to each batch. Stir in hot sauce.
